Since your using Vegenaise, you can take this on a camping trip without a worry. Since I've went vegan, I go through this like crazy in salads and sauces. Not to mention I've went down from 236lb to 208lb in 4 months! (Less weight to take more hikes!) Do note that vegenaise is fresh and "should" be refrigerated but can last up to a week out of the refrigerator and then the "freshness" goes bad. Otherwise, for your short camping trips, use Vegenaise instad of real Mayo. Chickpea Salad Make all portions of equal value (more or less for the sauce to your liking) - Celery
- tomatoes (tommy toes)
- cucumber (pealed)
- chickpeas (dry bean bag NOT canned loaded with salt!)
- red onion (Not white!)
- garlic salt to taste (Here is where you get your salt)
- Onion powder to taste
- Vegenaise (Low fat version "yellow top" is fine)
- lemon juice (fresh squeezed if possible)
- dill (fresh if possible, freeze dried if not)
Cut up everything, add to a bowl, chill for 1 hour. Clap your hands once, spin around like Michael Jackson, kick your right foot up in a Z pattern and go Oooh Yeaaaa! If you like the sauce creamier then add more lemon juice or less Vegenaise.
